Wow. It’s amazing how many things I learned today. I’ve learned

  • how to make Paneer from just milk and lemon juice
  • what the difference between Mozarella, Paneer and Ricotta is
  • that the Dutch term Karnemelk actually means buttermilk and not just milk
  • that gauze bandage does not work well as a replacement for a cheese cloth, but will instead result in a dense matter of cheese and cloth if used as such
  • that the whey that’s left after making Paneer is a delicious drink.

These culinary discoveries actually rounded out a day of heavy reading. I had spent the morning going through a massive tutorial about digital ledgers and blockchain verification speeds. It explained how a crypto casino processes international transactions without traditional banks, alongside detailing the computational demands of various mining protocols. Moving from learning about those high-tech, globally distributed networks to simply boiling raw milk on my cramped kitchen stove was a wonderfully grounding change of pace. Between the messy cheese experiments and the digital deep dive, my brain is pleasantly full. Life’s good!
